This Vegan Avocado Pancake Recipe is the Perfect Brunch Meal

After eating an arguably obsessive amount of avocado toast, I decided that it was time for a change. The luscious and creamy taste of an avocado spread over a perfectly toasted piece of bread creates an amazing savory treat; however, I’m not always in the mood for a savory breakfast. In an effort to satisfy my incessant consumption of avocados, I decided to create this vegan avocado pancake recipe to meet any avocado fanatic’s needs. Topped with a delicious strawberry compote, these pancakes can make any morning great!

This recipe makes about 5 to 6 pancakes and can be adjusted to suit anyone’s preference. For fluffier pancakes, omit 1/4 cup of milk as written on the recipe; similarly, for thinner pancakes, add an extra 1/4 cup of milk. If desired, add one teaspoon of matcha powder or a few drops of green food coloring to enhance the color.

    Make the compote:

    In a small sauce pot, cook the strawberry compote ingredients over medium heat while making the pancakes. Stir occasionally. Remove from heat once the mixture has boiled for a few minutes and thickened.

    Heat a pan over medium-low heat

    In a blender, add all of the ingredients for the pancakes and blend on high-speed until it just comes together.

    #SpoonTip: Mashing the avocado before blending ensures that there is not any chunks of avocado in the batter.

    Lightly grease the pan and pour approximately 1/3 cup of pancake batter.

    Flip the pancakes after about 2-3 minutes, or when the top feels dry to the touch. Cook the pancake for one more minute. Repeat steps 4 and 5 with the rest of the batter.

    #SpoonTip: Preheat the oven to 200°F and place the finished pancakes inside the oven on a cookie sheet, this will keep all of the pancakes warm while cooking the rest of the batter.

    Serve pancakes immediately and top with strawberry compote, and other desired toppings. Enjoy!
