This Strawberry Cobbler is the Perfect Single-Serve Summer Dessert

If amazing produce is not the best of summer then I don’t know what is. Strawberries are likely just starting to pop up at your local farm. While they’re delicious raw they make a killer filling for a cobbler. This treat is vegan, gluten free, and contains no refined sugar.

If strawberry isn’t your thing or you just prefer a combination of fruits you can try blueberries, raspberries and blackberries to make a great cobbler.

Single-Serve Berry Cobbler

  • Cook Time: 20 minutes
  • Total Time: 22 minutes

Ingredients
  • 1 1/2 tablespoon gluten free flour
  • 2 tablespoon gluten free rolled oats
  • 1 tablespoon melted coconut oil
  • 1 tablespoon coconut sugar or maple syrup
  • 1 pinch cinnamon
  • 4 medium strawberries

Step 1

Preheat oven to 350°F.

Step 2

Use a fork to blend flour, rolled oats, cinnamon, coconut oil, and sweetener in a small bowl.

Slice strawberries.

Add strawberries, followed by the crumb topping.

Bake for 20 minutes, enjoy hot or cold.
