How To Use Leftover Pumpkin Pie

Pumpkin pie is arguably the #1 dessert during the fall season. The recipes are endless for this pie, with some delicious gluten and dairy-free ones, too. But what if you make (or buy) too much? Sure you can just serve yourself another slice, but why not do something else with those leftovers? Here are six ways to jazz up your pumpkin pie leftovers — on the rare occasion that there is any pumpkin pie left.

Pumpkin Pie Bites

Let’s start with something simple like these pumpkin pie bites. You can mash your leftovers and then form them into balls. Place the balls onto a baking sheet and then refrigerate. You can leave them as is or coat them with chocolate like in this tutorial by @alexandra_loudres on TikTok.

This reminds me of a messy cake pop.

Pumpkin Pie Cake Pops 

Speaking of cake pops…the process for this recipe is the same as making pumpkin pie bites. Like in the recipe by @alexandragoeders on TikTok, make sure to thoroughly mix your leftover pumpkin pie to create a smooth dough. 

With a spoon, scoop some of your dough and place it on a baking sheet. Add a stick and dip your pop into melted chocolate. Decorate to your liking, and now you have a pumpkin pie cake pop!

Pumpkin Pie Baked Oatmeal 

Spice up your breakfast with some pumpkin pie-baked oatmeal. In @lilbrownieboo’s recipe, you can have these bars any time of the day — not just for breakfast.

She mentions that oatmeal bars can be reheated individually for an easy breakfast/snack during the week. You can also freeze individual slices to be enjoyed whenever you like. 

Pumpkin Pie Ice Cream

Ice cream is a year-round thing so why not have pumpkin pie-flavored ice cream to maximize the pumpkin season?

Here’s @carolinahomebrew’s ice cream recipe:

Ingredients:

1/2 cup whole milk

1/2 cup half and half

1/4 cup granulated sugar

1 tsp vanilla extract

1/3 of a 9-inch pumpkin pie

Directions:

Heat ingredients to dissolve sugar and then blend. After blending, freeze for 6-8 hours.

Pumpkin Pie Blondies

According to one user who tried @aryanjafrii’s blondies, they “can confirm that it’s bussin’.” TBH that’s all I needed to hear to add this recipe to the list.

Aryan stated that she made her own filing, but scooping out the filing from the leftover pumpkin pie should suffice. In the TikTok video, no set measurements of the milk, flour, and chocolate are stated, but Aryan responded to a comment that she eye-balled the ingredients until it was the “right consistency.” Add the mixture into a pan and bake.
