Lemon Basil Ramen Stir-Fry with Brussels Sprouts

  • Easy

    Ingredients

  • 1 cup arugula/spinach mix
  • 4 sprigs of fresh basil
  • 1 handful of cherry tomatoes
  • 1/4 cup feta cheese
  • 1 cup Brussels sprouts
  • 1/4 cup red wine vinegar
  • 1 package of beef ramen
  • 1 tablespoon garlic salt
  • 1 tablespoon black pepper
  • 1 teaspoon crushed red pepper
  • 2 tablespoons of lemon juice
  • olive oil (for frying)

  • Step 1

    Slice Brussels sprouts and tomatoes and toss them into a pan coated with olive oil. Add seasoning.

  • Step 2

    Add in arugula/spinach mix once Brussels sprouts start to soften.

    Make ramen according to package directions and strain. Add noodles to veggies.
