Two Healthy and Scrumptious Ways to Eat Pie for Breakfast

As the leaves begin to fall and the intense summer humidity finally subsides, the season of sweaters and thanksgiving and everything pumpkin spice is upon us.

While I love fall for many reasons, pie is definitely at the top of the list. Nothing says fall like cozying up with a big slice of pumpkin pie (or two).

Unfortunately, eating copious amounts of pie everyday of the fall would probably result in a few too many layers of “insulation” (read blubber) by the time winter rolled around, so I decided to figure out how to infuse my fall days with as much pie inspiration as possible. Step one in this journey was to figure out how to have pie for breakfast.

After some recipe experimentation, I created 2 extremely satisfying - and healthy - vegan pie-themed breakfasts to get me out of bed in the morning (and dream about pie for breakfast the night before).
