Transform Your Chips Ahoy Cookies Into Mini Ice Cream Sandwiches

This could not be any easier. All you need is a microwave and a little fruit for good measure. It’s an easy way to dress up plain Chips Ahoy cookies or Oreos if that fits your fancy. The fudge bar sauce is tangy and sweet with yogurt adding more than just pure sugar.

Miniature Ice Cream Sandwiches with Chocolate Truffle Fudge Bar Sauce

Ingredients
  • 1 package of Chips Ahoy cookies
  • 1 tub of ice cream
  • 1/2 carton of Noosa coconut yogurt
  • 1/4 cup cacao nibs
  • 1 banana
  • 1/4 cup strawberries
  • 1 package of Skinny Cow Chocolate Truffle fudge bars
  • 2 teaspoon ground cinnamon

Step 1

Melt 2 fudge bars with 1/2 carton of Noosa coconut yogurt and cinnamon in microwave for 2 minutes.

Step 2

Mix fudge bar mixture and microwave for another 2-3 minutes until warm then serve with nibs, ice cream and fresh fruit over cookies.
