With just four ingredients, you'll quickly have delicious sweet treat coming out of your oven. Nobody will ever know these sensational cookies came from a boxed cake mix ;)

Ingredients

-1 box red velvet cake mix (I used Duncan Hines, but any brand works!)

-1/3 cup canola or vegetable oil

-2 eggs

-1/2 cup confectioners sugar (for rolling cookies in)

Directions

Step 1

Preheat your oven to 350° F.

Step 2

In a medium size mixing bowl, combine the cake mix, oil, and eggs with an electric mixer (or by hand) until fully incorporated. It is okay if the batter is a little thicker than expected!

Prep a cookie sheet with nonstick spray (optional if you have a nonstick sheet already!)

Step 4

Using an ice cream scoop, spoon, or any utensil of your choice, gather around 1 - 2 tablespoons worth of dough and roll into a ball in your hand (if the dough is slightly too sticky to handle, refrigerate for up to 15 minutes or until firm enough to roll). 

Step 5

Drop the ball of dough into a bowl with your powdered sugar, and swirl around until fully coated.

Place the coated ball of dough onto your prepared cookie sheet.

Repeat steps 4-6 until all the dough has been used, placing the cookies around 2 inches apart on the sheet. 

Step 8

Bake for 8-10 minutes, or until they feel relatively firm to touch. As the cookies are red, you won't see much browning. So, be careful not to over bake! It's okay if they're slightly soft in the center.

Step 9

Let cool for upwards of 30 minutes to allow for firming.
