Easy Sesame Peanut Butter Noodles

This article is written by a student writer from the Spoon University at Northwestern chapter.

Asian spice brings a certain kick and comfort to food like nothing else. There’s nothing more frustrating than wanting to cook Asian noodles then realizing you need to go to H-Mart for ingredients – but it’s miles away.

Worry not! This recipe requires ingredients you can find at any local supermarket and can be whipped up in less than 15 minutes.

This recipe makes a Thai-inspired noodle dish. It uses packaged ramen noodles and pantry staples, so it’s perfect for a quick and easy meal.

Ingredients

– 1 package of ramen noodles without the seasoning packet

– 2 tbsp sesame oil

– 1 1/2 tbsp smooth peanut butter

– 2 tbsp soy sauce

– 1 tbsp rice vinegar or black vinegar

– 1 tsp minced garlic

– sliced green onions for garnish

Directions:

1. Cook noodles according to package instructions. Drain and set aside in a bowl.

2. In a small bowl, mix together the sesame oil, peanut butter, soy sauce, vinegar and garlic until smooth.

3. Pour the sauce over the noodles and mix until well-incorporated. Garnish with green onions.

These savory noodles bring the umami of your favorite Asian noodle dishes like Pad Thai without the difficult-to-find ingredients and time commitment. You don’t need to spend $15 on Asian noodles at a restaurant or go through the trouble of finding niche spices and sauces at Asian markets. This recipe is perfect for when you’re feeling lazy but craving that Asian flavor.
