This Zesty Indian Breakfast Recipe Puts Your Cereal to Shame

This article is written by a student writer from the Spoon University at UVA chapter.

Even though it’s the most important meal of the day, you’re not the only one who still considers a piece of toast or a bowl of cereal “breakfast.”

The next time you have a spare ten minutes in the morning, whip up a quick, hearty breakfast such as this popular Indian dish channa purgi.

Channa purgi is a staple in many Indian kitchens, especially for breakfast. It is similar in taste and consistency to scrambled eggs, but no eggs are used at all. Instead, it’s made with a fresh cheese called paneer, which is actually really easy to make.

In just ten minutes, you can give your body more flavorful nutrients than toast or cereal could ever offer. You’ll be fuller for longer, and less likely to overcompensate with a Baskin Robbins’ large chocolate Oreo shake later in the day. Trust me, your body will thank you.
