Can it get any better than a sunny side up egg with an extra runny center? Turns out that it can by curing the yolks. It’s just like making Scandinavian gravlax with salmon, only you use egg yolks instead. It’s so easy. Just let the yolks hang in a salt mixture for about an hour, gently rinse, and serve. Imagine these graved eggs on hot buttered toast or avocado toast. How European are we? Feeling fancy already.

Graved Eggs

    Ingredients

  • 2 egg yolks
  • 1 cup salt
  • 1 cup sugar

    Mix together the salt, sugar, and any flavorings.

    Pour 2/3 of the salt mixture into a bowl. Make divots in the mixture for the yolks to rest in. Place the yolks in the divots, and cover with the rest of the mixture.

    Let the yolks sit for about an hour or longer. The longer they sit, the less runny the yolks will be.

    Carefully remove the yolks from the bowl and rinse off the salt mixture. Enjoy.
