The Watergate "salad" is enjoyed by many. I say "salad" because it's not one of the leafy salads we are used to. It is green, but its festive aesthetic comes from the pistachio pudding, one of its main ingredients. As we get together to celebrate St. Patrick's day with friends and family, this is a perfect side dish to have.

Watergate Salad

  • 1 can 20oz crushed pineapple with juice
  • 1 package 4oz pistachio pudding mix
  • 1⁄2 cup chopped nuts
  • 1 cup miniature marshmallows
  • 1 3⁄4 cups non-dairy whipped topping thawed

  • Step 1

    In a large bowl, combine the pineapple (with its juice), the pistachio pudding mix, nuts, and marshmallows.

  • Step 2

    Stir until well blended.

  • Step 3

    Add the whipped topping to the mixture and stir gently.

    Refrigerate for at least one hour before serving.
