Sweet Potato Pancakes

Ingredients
  • 2 cups flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 2tbsp brown sugar
  • 2 cups cooked & mashed sweet potatoes
  • 2 eggs
  • 1 1/2 cups almond milk
  • 2 tbsp melted butter

Step 1

Combine all dry ingredients in a bowl. Set aside.

Combine sweet potatoes, eggs, almond milk, and melted butter in another bowl.

Add dry ingredients to wet ingredients. Let batter sit for five minutes.
