This recipe was one of those experiments that actually worked out. I was mildly concerned that my toaster would explode or catch fire. But instead, I discovered that frozen Uncrustables make for the perfect toasted duo in an ice cream sandwich – a peanut butter lover’s dream.
The berry sauce works well with the frozen mangos featured or any other frozen fruit that will break down once cooked. Sage gives it a savory sentiment that compliments peanut butter and cuts the sweetness. #science.
Toasted Uncrustable Ice Cream Sandwich with Berry Lemon Sage Sauce

- 2 frozen Uncrustables
- 1 teaspoon coconut oil
- 1 tablespoon ground sage
- 2 teaspoon cinnamon
- 1/2 cup frozen fruit of your choice (mango featured here)
- 1 tablespoon lemon juice
- 1/4 cup blueberries
- 1/4 cup strawberries
- 1 tub of ice cream (Ben & Jerry's Chocolate Chip Cookie Dough featured here)

Step 1
Cook frozen fruit and fresh berries in a pan with coconut oil, cinnamon and sage for about 5-10 minutes mashing the berries in the pan.

Meanwhile, toast Uncrustables in a toaster until golden brown and set aside.

Step 3
Add in lemon juice and bring to a boil then simmer until sauce is a slightly thicker consistency.

Serve sauce over ice cream and garnish with sage an cinnamon.
