This Icy Tequila Lemon Sorbet Will Keep You Cool for the Summer

Lemons are the perfect summer treat. Although they are sour, when prepared right they can be very sweet. When paired with tequila they are perfection. This little “pick-me-up” is perfect for those hot summer days with family and friends.

    Combine water and sugar in a small saucepan. Bring to a boil; cook 1 minute or until sugar dissolves. Add the lemon zest when the mixture is still warm. Cool completely.

    While the sugar mixture is cooling, cut off the top 1/3 of the lemon and reserve for the top for a “cap”. Remove juice and flesh and put it in your juicer. Hollow out each lemon by using a grapefruit knife. Make a slight shallow cut on the bottom of each lemon shells to help them sit straight up when placed on a plate. Freeze or let sit until sorbet it made.

    Combine the cooled sugar mixture, lemon juice, and tequila. Pour mixture into a freezer-safe container; freeze for 4 hours or until firm.

    Spoon the sorbet into the hollowed out lemons and serve.
