This Chipwich Ice Cream Cake Will Have You Crying Tears of Nostalgia

My favorite dessert growing up was always ice cream and/or cookies which is why the Chipwich was my favorite go-to treat anytime I took a trip to WaWa or run outside for the ice cream truck. It's been a little while since I've had my favorite childhood dessert, but then I was introduced to this Chipwich ice cream cake and it became a quick crowd pleasure amongst my roommates.

Using simple ingredients that you would use to make a normal chocolate chip cookie (and, of course, vanilla ice cream), you can recreate this sweet treat from childhood to enjoy with your friends.

Chipwich Ice Cream Cake

  • Total Time: 4 hrs 15 mins

Ingredients
  • 3/4 cup butter room temperature
  • 1 cup light brown sugar
  • 1 egg plus 1 yolk
  • 2 teaspoon vanilla
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cup flour
  • 1 1/2 cup chocolate chips
  • 1/2 gallon vanilla ice cream
  • 1 cup mini chips

Step 1

Add butter and brown sugar in a large mixing bowl and beat until fully combined.

Add egg, baking soda, vanilla extract, and salt into your dough and mix until fully combined.

Slowly beat in flour and continue mixing dough.

Add chocolate chips to your batter and mix well.

Step 5

Spray pans with baking spray and press out dough out in separate pans. If you have a spring pan, use it!
#SpoonTip: Don't make the dough too thick in the pan. Remember, it will rise when it cooks.

Step 6

Bake your cookies at 350°F for 15 minutes then allow your cookies to cool (it helps if you stick them in the fridge). Carefully remove your first cookie from the pan.

Step 7

Spread vanilla ice cream on top of your cookie.
#SpoonTip: Allow the ice cream to soften slightly before spreading to make it easier.

Add your second cookie on top and freeze for at least 2 hours.

Step 9

Remove your Chipwich cake from the freezer and serve.
