This Breakfast Quesadilla Will Cure Your Hangover

Is there anything more perfect, more pure than the cheesy quesadilla? Well, now you can have it for breakfast, too. Bacon. Eggs. Absolute deliciousness. So good, you might want to have it all day.

Breakfast Quesadilla

Ingredients
  • 2 flour tortillas
  • 1 cup grated cheese blend, divided
  • 2 eggs, scrambled
  • 4 sliced bacon, chopped
  • 1 teaspoon vegetable oil

Step 1

Heat oil in a skillet over medium heat. Lay one tortilla down, and top with half of the cheese, scrambled eggs, and bacon. Cook until the tortilla turns golden on the bottom.

Step 2

Sprinkle on the rest of the cheese and place the second tortilla on top. Carefully flip the quesadilla.

Step 3

Cook until crispy on both sides and the cheese is nice and melted. Serve with salsa, sour cream, and a squeeze of lime.
