As a college student, time and money are always in short supply. This yummy 3-ingredient recipe is quick, inexpensive and healthy too — AKA the weeknight dinner trifecta.

BBQ Chicken Sweet Potato

  • 1 sweet potato
  • 1 cup shredded chicken breast
  • 2 tablespoon BBQ sauce
  • Prep Time: 10 minutes
  • Cook Time: 40 minutes
  • Total Time: 50 minutes

Step 1

Preheat oven to 450°F.

Step 2

Cut sweet potato lengthwise and place facedown on a greased or non-stick baking sheet.

Step 3

Place potato in the oven, and bake for 30-40 minutes or until tender.

Step 4

While potato is baking, cook and shred chicken breast.

When potato is almost done, pour your favorite BBQ sauce into a microwave safe bowl and microwave for 30 seconds.

Step 5

Combine BBQ sauce and shredded chicken.

Step 6

Wait until cool enough to handle, then scoop out centers of potato halves.

Spoon BBQ chicken mixture into potatoes.

Step 7

Serve immediately and enjoy.
