Have a ripe avocado that’s about to be thrown in the trash? Avoid waste with this innovative avocado pesto that you can prepare quickly and with minimal mess. Avocado adds an extra punch of protein to this sauce that’s delicious in a wrap, on spiralized veggies, and much more.

#SpoonTip: Use the pesto right away or store in an airtight container with saran wrap pressed over the top to avoid browning (due to the avocado).

    Place 1/2 ripe avocado, fresh basil, peeled garlic, lemon juice, salt, and pepper in the food processor. To make a thicker pesto, add an entire avocado.

    Mix until all ingredients are slightly chopped. The mixture will not be completely smooth at this stage.

    While the processor is running, drizzle in the olive oil until completely combined.
