These Peanut Butter Chocolate Chip Toffee Bars Are Actually Gluten-Free

Having a dietary restriction at college can be difficult, especially when you are craving a homemade treat. I mean, who really likes those boxed gluten-free cookies that are full of ingredients you cannot pronounce over a warm, gooey, straight out of the oven cookie or bar? Well, next time you are in the mood for an amazing dessert, whether you are gluten-free or not, make these effortless flourless peanut butter chocolate chip toffee bars. I guarantee you they are worth it.

 #SpoonTip: use all natural crunchy peanut butter with only salt and peanuts. If no salt, add 1/4 teaspoon to recipe.

Peanut Butter Chocolate Chip Toffee Bars

Ingredients
  • 1 1/2 cup natural crunchy peanut butter
  • 1/2 cup pure maple syrup
  • 2 eggs, slightly beaten
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 1/2 cup toffee chips
  • 3/4 cup semi-sweet chocolate chips

Step 1

Preheat oven to 350ºF.

Step 2

In a large bowl, mix together, peanut butter, maple syrup, eggs, baking soda, and vanilla until well combined.

Fold in chocolate chips and toffee chips.

Step 4

Pour batter into a greased 9×9 inch pan and smooth until flat. Sprinkle a few extra chocolate chips on top. Bake for 20 minutes or until edges are golden.

Step 5

Remove from oven and allow to cool before cutting into slices. Enjoy (try not to eat the whole batch yourself).
