This protein-packed energy ball recipe has been one of my go-to snack recipes for years. They are perfect for an on-the-go breakfast when you're running late for class, a quick boost after working out or studying, or even for when you are craving something sweet after dinner. They take no time and are easy to make with simple pantry ingredients.
One of my favorite things about this recipe is that it is super versatile. If you don't have dark chocolate chips on hand, replace them with peanut butter chips or semi-sweet chocolate chips. Substitute flax seed with wheat germ. Try adding in nuts, cranberries, or cocoa powder – the combinations are endless. They are also perfect for making ahead of time. Refrigerate them in an airtight container and you have a week's worth of healthy snacking – if they even last that long...

Ingredients
- 1 cup old-fashioned rolled oats
- 2/3 cup unsweetened shredded coconut toasted
- 1/2 cup ground flaxseed
- 1 tablespoon chia seeds
- 1/2 cup creamy peanut butter
- 1/3 cup agave or honey
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1/4 cup unsweetened cocoa powder optional
