They take no time and are easy to make with simple pantry ingredients.
One of my favorite things about this recipe is that it is super versatile. If you don’t have dark chocolate chips on hand, replace them with peanut butter chips or semi-sweet chocolate chips. Substitute flax seed with wheat germ. Try adding in nuts, cranberries, or cocoa powder – the combinations are endless. They are also perfect for making ahead of time. To toast the coconut: Preheat oven to 350°F. Spread coconut evenly on a rimmed baking pan. Heat for 7-10 minutes or until lightly browned, stirring frequently. Let coconut cool to avoid melting the chocolate chips when combined.
Combine all ingredients in a large mixing bowl and stir until thoroughly combined.
Cover the mixing bowl and chill in the refrigerator for at least 30 minutes, or until the mixture is chilled. This is optional but will help the mixture stick together more evenly.
Tip: If you are looking to save more time, press the mixture into a parchment-lined baking dish and cut into bars.
Roll the mixture into 1-inch balls.
Tip: slightly wetting your hands before rolling the mixture can help to prevent it from sticking to your hands.
Enjoy immediately or refrigerate in a sealed container for up to 1 week. The energy balls can also be frozen for up to 3 months.
