They take no time and are easy to make with simple pantry ingredients.

One of my favorite things about this recipe is that it is super versatile. If you don't have dark chocolate chips on hand, replace them with peanut butter chips or semi-sweet chocolate chips.     Ingredients

  • 1 cup old-fashioned rolled oats
  • 2/3 cup unsweetened shredded coconut toasted
  • 1/2 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1/2 cup creamy peanut butter
  • 1/3 cup agave or honey
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup unsweetened cocoa powder optional

  • Step 1

    To toast the coconut: Preheat oven to 350°F. Spread coconut evenly on a rimmed baking pan. Heat for 7-10 minutes or until lightly browned, stirring frequently. Let coconut cool to avoid melting the chocolate chips when combined.

    Combine all ingredients in a large mixing bowl and stir until thoroughly combined.

    Cover the mixing bowl and chill in the refrigerator for at least 30 minutes, or until the mixture is chilled. This is optional but will help the mixture stick together more evenly.

    Tip: If you are looking to save more time, press the mixture into a parchment-lined baking dish and cut into bars.

    Tip: slightly wetting your hands before rolling the mixture can help to prevent it from sticking to your hands.
