Mint Chocolate Chip Truffles

  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1 teaspoon peppermint extract
  • 1 drop green food coloring
  • 1/2 cup mini chocolate chips
  • 12 oz melting chocolate

  • Step 1

    In a large bowl, mix together 4 oz of softened cream cheese and 1 stick of unsalted butter with a mixer until well combined.

  • Step 2

    Add 1 teaspoon of peppermint, 1 drop of green food coloring, and 2 cups of powdered sugar and mix again. Fold in 1/2 cup of mini chocolate chips.

  • Step 3

    Scoop 1 inch balls onto a lined sheet or plate and freeze for 1 hour.

  • Step 4

    Melt 12 oz of melting chocolate in a large bowl and dip frozen balls until well coated.

  • Step 5

    Garnish with more mini chocolate chips and enjoy!
