These Mini Cannoli Cups Will Transport You to Italy

This spin on a classic cannoli will have you coming back for seconds and maybe even thirds. No need to feel guilty since the pie crust replaces that classic deep fried shell. It’s exactly what you need to impress your friends this summer.

Mini Cannoli Cups

Ingredients
  • 2 refrigerated pie crusts
  • 4 tablespoon cinnamon sugar
  • 1 pinch flour
  • 15 oz whole milk ricotta cheese
  • 1/2 cup confectioners sugar
  • 2 tablespoon white sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup mini semisweet chocolate chip

Step 1

Roll out pie crusts and sprinkle cinnamon sugar over it.Roll over dough with rolling pin gently to push cinnamon and sugar into the pie crust.

Step 2

Use a biscuit cutter, cut out circles in the dough. Lightly press the circles into ungreased mini cupcake pans to form a cup.

Step 3

Prepare filling by combining ricotta cheese, confectioners sugar, sugar, and vanilla extract together. Mix until combined.

Step 4

Assemble your cups and add mini chocolate chips and sprinkle with confectioners sugar.
