These Homemade Strawberry Nutri-Grain Bars Are Better Than Store-Bought

You always knew it was going to be a good day when you got to lunch and pulled out a crumbly, mouth-watering Strawberry Nutri-Grain Bar from your lunch box. I have decided that these homemade Nutri-Grain Bars will help make a comeback.

Now that I am more grown up, I wanted to remake this lunchtime favorite, but healthier. I found this recipe from my favorite vegan blog, Oh She Glows, and made it gluten-free and dairy-free.

I think of these as healthy homemade strawberry Nutri-Grain Bars. You can also make these with regular oats and dairy. Another suggestion is making the bars with a homemade raspberry, blueberry, or peach jam. However you choose to make these bars, they’ll sure to be a hit.

I suggest freezing the bars after letting them cool and then letting the bars defrost before eating. They make for a great snack, an on the go breakfast, or a light summer dessert.

Homemade Strawberry Nutri-Grain Bars

  • Prep Time: 30 minutes
  • Cook Time: 30 minutes
  • Total Time: 60 minutes
  • Servings: 9-12 bars

Ingredients
  • 1.5 cup oats
  • 1 cup flour (whole wheat, gluten-free, etc.)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup brown sugar
  • 1 egg
  • 10 tablespoon butter
  • 1/4 cup maple syrup
  • 2 tablespoon almond milk
  • 1 box fresh strawberries
  • 3 tablespoon sugar
  • 1 tablespoon chia seeds

Step 1

Preheat oven to 350°F and prepare ingredients.

Step 2

Finely chop fresh strawberries and combine with sugar in a sauce pan over medium heat. Continue to let simmer for about 15-20 minutes until it has the “jam” look. Add vanilla and chia seeds, then mix well.

Step 3

Combine dry ingredients into one large bowl and mix together with fork until it seems sticky and mixed.

Step 4

Pat down 3/4 of dry ingredients into a greased pan, I used a 9×9. Spread cooled and congealed jelly mixture on top, then sprinkle remaining dry mixture on top.

#SpoonTip:You can choose to sprinkle, or split dry ingredients half and half for a more stable bar.

Step 5

Bake in heated oven, until top takes on a golden brown color.

Step 6

Let cool, then slice up to serve! Either serve fresh or freeze and then slightly defrost.
