These Funfetti Ice Cream Bites Will Satisfy Your Inner Child
PSA that ice cream isn’t as bad for you if it’s in bite size form. Just kidding, that’s absolutely false. But it does taste a lot better with a chocolate shell and rainbow sprinkles. This is a fact.

Ingredients
- 4 cup cake batter ice cream, softened
- 2 cup chocolate chips
- ½ cup coconut oil
- ½ cup nonpareil rainbow sprinkles

Step 1
Cover a baking tray with wax paper and spoon in 4 cups of softened cake batter ice cream.

Smooth out with a spoon, and cover with another layer of wax paper to secure into place.

Freeze for 24 hours.

Remove ice cream from the baking tray, and slice into cubes.

Place back into the freezer while preparing the chocolate shell.

In a bowl, add the chocolate chips and coconut oil and microwave until melted.

Once the mixture is cool, coat the cubed ice cream by dipping it into the chocolate bath.

Quickly sprinkle rainbow nonpareils onto the cubed ice cream before the chocolate hardens.
