These Cucumber Mint Popsicles Are The Perfect Poolside Treat

We all know summer isn’t summer without spending endless hours sitting and tanning poolside. To accompany you as you chill at the pool, try these cucumber mint popsicles. This spa-like combo of flavors will make you even more relaxed as you soak up those summer rays.

Cucumber Mint Popsicles

  1. Heat the water and sugar in a small saucepan over low heat until the sugar is completely combined with the water. This should only take about a minute.

    Combine the water mixture, coconut water, mint, lime juice and cucumbers in a blender.

    #SpoonTip: Blend the mixture to whatever consistency you like: blend it longer for a super smooth mixture or blend it shorter for a more coarse mixture.

    Pour the mixture into your ice pop molds and freeze for 4-6 hours (depending on how cold your freezer is).
