These Cookie Sandwiches Will Get You Pumped for Spring

Be it rain or shine, these delicious orange and lemon flavored cookie sandwiches will bring you a taste of spring! You can make them with any type of cookie—even store-bought ones—but I liked the idea of the dark-brown chocolate offsetting the pastel colors. You can also substitute the flavors and colors to fit a season or holiday.

 

Cream-Filled Cookie Sandwiches

  • Cook Time: 20 minutes

Ingredients
  • 2 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 3/4 teaspoon salt
  • 1 1/4 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Step 1

Preheat oven to 325°F.

Step 2

Mix flour, cocoa powder and salt in bowl.

Step 3

In a separate bowl mix together melted butter and brown sugar until light brown. This might require an arm workout, but it will be worth it.

Step 4

Combine the dry with the wet ingredients.

Once combined, knead with your hands into a soft crumbly dough.

Step 6

Pinch off bits of the dough and roll into small balls, a little over an inch in diameter.

Squish dough balls flat into cookie shape and place on baking sheet. The cookies in my image came out a little thick, so aim to make them a little flatter than depicted here, so the dough-filling ratio is enjoyable.

Place in oven for about 20 minutes.

Ingredients
  • 3/4 cup unsalted butter, melted
  • 1 3/4 cup powdered sugar
  • 3/4 teaspoon vanilla extract
  • 1/8 teaspoon lemon extract
  • 1/8 teaspoon orange extract
  • Food coloring

Step 1

Mix together melted butter and powdered sugar into a slightly stiff cream.

Step 2

Divide filling into as many bowls as you like depending on how many colors and flavors you’d like. For this recipe, I divided it into two.

Step 3

Add one drop of yellow food coloring into one bowl and one drop of red food coloring into the other. The colors will come out pastel, add more if you would like a deeper color.

Step 4

Add the lemon extract into the yellow bowl, and the orange extract into the orange bowl. You can add more to suit your taste.

Step 5

Let cookies cool once they are done. Then dollop a little bit of filling into the middle of one cookie with a spoon and finish by pressing another one on top.
