Do you like brownies? Gooey ones? I know I do, especially when served warm. It just hits different, you know? I've tried an ungodly amount of brownies throughout my life, but these Ultimate Fudgy Brown Butter Brownies have to be the best brownies I've ever made and had the pleasure of consuming. They are perfect and happiness-inducing in every way.

Ultimate Fudgy Brown Butter Brownies

  • 3/4 cup unsalted butter
  • 3/4 cup Dutch-Process OR 100% unsweetened cocoa powder
  • 1 tsp salted caramel OR vanilla extract
  • 1 tsp instant coffee granules
  • 1 3/4 cup packed dark brown sugar
  • 3 large eggs
  • 3/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 180g 70% dark chocolate chopped

  • Step 1

    Preheat the oven to 350 F. Grease and line a 8x8 inch pan with parchment paper on all sides and set aside.

  • Step 2

    Place butter in small saucepan and continue to frequently stir and melt until small brown flecks can be seen (& a distinct subtle change in smell), removing from heat.

    Add the cocoa powder, extract, and instant coffee granules to the brown butter and whisk to combine until no lumps of cocoa remain.

  • Step 4

    In a separate bowl, beat the eggs and brown sugar until light, fluffy, and paler in color. Add the butter mixture to the egg mixture and use a rubber spatula to fold together.

    Add the flour, cinnamon, and salt and fold the mixture until just combined. Last, fold in the chopped dark chocolate chunks until just combined.

    Transfer mixture into prepared baking pan and bake for roughly 25-35 minutes, depending on your oven. Every 2 minutes from the 20 minute mark, test with a toothpick until the brownies are only slightly underbaked. Take out and let cool completely non a wire rack before cutting.
