Chicken Katsu Curry – the Simple Version

You don’t have to be a culinary genius to cook up a good curry. All you need are a few simple ingredients and a passion for cooking. The best curries are made with a lot of love.

    Chop all your vegetables! (and garlic).

    Start with a bit of oil in the pot and then put the onions in the pot and after a couple minutes of browning add in the carrots, apples and garlic.

    Then slowly add in the spices (curry powder and garam masala) and soy sauce, stir and add in the chicken broth slowly. Let your curry curry simmer and slowly stir (add a thickening agent like cornstarch or coconut milk if its too runny).

    Start the panko bread crumb mixture by beating an egg and placing it on a plate and the same with the breadcrumbs.

    Coat your chicken pieces with salt, pepper and sugar to add flavor and them put them in the egg mixture and then into the breadcrumbs until they are all coated.

    Set a semi-deep pan for frying on high heat and add in canola oil (or any other oil you prefer for frying) and let breadcrumbs brown around 2-3 minutes on each side, they should almost be burnt and the chicken should be fully cooked in around 5 minutes.

    Cook up your rice and pour the desired amount of curry into a bowl.
