Imagine being super young, and suffering from acid-reflux and having absolutely no idea why. That was my sister, until ultimately, last year, she got diagnosed with Eosinophilic Esophagitis caused by a dairy allergy. For those wondering, there is a big difference between a dairy allergy and being lactose intolerant. Someone who is allergic to dairy may suffer from upset stomachs, hives, vomiting and even anaphylactic shock, whereas someone who is lactose intolerant may experience abdominal pain, nausea, or gas, but never a life threatening reaction.

Since then, my mother has had to become innovative and recreate my sister's favorite foods using alternative methods. One of my sister's favorite meals is lasagna, so my mother accepted the challenge and was able to create the most delicious dairy-free lasagna. Whether or not you have a dairy-allergy, are lactose intolerant, or simply want to try a delicious lasagna dish, this recipe is bound to be your new favorite.

Dairy-Free Lasagna

    Ingredients

  • 1 box Barilla Gluten-Free Oven-Ready Lasagna
  • 1 lb Organic Gluten-Free Ground Turkey -- I used Rancher's from Whole Foods Market
  • 16 oz Tofutti Milk-Free Ricotta Cheese -- I used my own my recipe -- will be below
  • 2 jars Rao's Marinara Sauce -- can use whichever you like
  • 1 pack Daiya Dairy-Free Mozzarella Style Shreds
  • Salt and Pepper to taste

    Preheat oven to 425° Fahrenheit.

    Cook the ground turkey in a non-stick pan for about 10 minutes (just add salt and pepper, no additional oils or spices are necessary).

    Pour half of the marinara sauce jar into the bottom of a 9x13 baking dish.

    Layer the lasagna sheets, filling the bottom of the baking dish.

    Cover the sheets with ricotta, followed by the ground turkey, add more marinara sauce and sprinkle it with mozzarella cheese. (Don't skimp on the sauce or the lasagna sheets will lift!!)

This dish can be frozen if there are leftovers, and can be enjoyed for many days following.
