Sweet Potato Cookies to Help You Kick Your Pumpkin Addiction

Pumpkin’d out? Healthy and sweet at the same time, sweet potatoes are a perfect candidate for a new fall favorite. This amazing cookie recipe was adapted from the blog Pharr Away. Whether you are baking for a special occasion or just because you’re awesome, these cookies will satisfy even the most stubborn sweet tooth.

Sweet Potato Cookies

  • Prep Time: 30 minutes
  • Cook Time: 15 - 20 minutes
  • Total Time: 45 - 50 minutes
  • Servings: 4 dozen cookies

Ingredients
  • 2 1/2 cup all-purpose flour
  • 1 cup sweet potato (roughly 2 microwavable sweet potatoes)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 8 tablespoon butter, room temperature
  • 1 egg
  • 1 1/2 teaspoon vanilla extract

Step 1

Preheat your oven to 350ºF and grease your cookie sheets.

Step 2

Cook and purée your sweet potatoes. If you’ve never microwaved them before, or need a refresher, check out this article.

Step 3

In a bowl combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt then mix well.

Step 4

In a large bowl, beat together the brown and granulated sugars and butter until soft. Do this preferably with an electric mixer but it can be done by hand (if you are like my broke self and can’t afford one).

Step 5

Mix in the sweet potato purée, egg and vanilla.

Step 6

Incorporate the dry ingredient mixture in increments, beat together on a high speed until well blended.

Step 7

Scoop dough onto the cookie sheet. Each should be about a tablespoon.

Step 8

Bake for 15 to 20 minutes or until the edges start to brown.

Step 9

Allow cookies to cool completely then drizzle icing on top (recipe below).  For more controlled drizzling, pour the icing into a Ziploc bag and cut the tip. If you’re ok with them not being Instagram-ready just use a spoon.

Browned Butter Glaze

  • Prep Time: 2 minutes
  • Cook Time: 2 - 5 minutes
  • Total Time: 5 - 10 minutes
  • Servings: Enough to cover 4 dozen cookies

Ingredients
  • 4 tablespoon butter, room temperature
  • 1 cup powdered sugar
  • 1 1/2 teaspoon vanilla extract
  • 2 tablespoon hot water

Step 1

Melt the butter in a saucepan on medium heat. Continuously stir or whisk until the butter is brown, about 2 to 5 minutes.

Step 2

Once you remove the saucepan from the heat, stir in the confectioners sugar and vanilla.

Step 3

Add water until you reach the consistency you want for drizzling.
