This recipe uses a Southwest-style blend of rice, beans, and vegetables for a satisfying meal you can whip up in less than 15 minutes. If you’re packing this for lunch, keep the lettuce in a sealable bag and add it after reheating the chicken and vegetables. To punch up the flavor, feel free to add your favorite sauces such as salsa, sour cream, or a cilantro lime sauce.

  1. Follow package instructions to heat Power Blend in the microwave and set aside.
  2. Place chicken into a medium microwave-safe bowl and microwave for a minute or until heated through.
  3. Divide lettuce evenly between two medium bowls. Top with chicken and Power Blend. Serve warm.
  4. If keeping the second serving for leftovers, store chicken, Power Blend, and lettuce separately.
