More often than not, when I pack food for myself, it ends up cooling to room temperature and looks completely unappealing by the time I get around to eating it. This is a legit problem I face on the daily. But I have found the light at the end of the tunnel. Summer rolls are the answer.

This Sriracha lentil summer rolls recipe make for super easy lunch transport and they stay fresh throughout the day. Not to mention they are super healthy and filling. Don't worry if you don't have these specific veggies, you can sub whatever you have on hand. Store them in some plastic wrap for an easy snack or light meal later on.
