These Sriracha Lentil Summer Rolls Are More Fresh Than the Prince of Bel-Air

More often than not, when I pack food for myself, it ends up cooling to room temperature and looks completely unappealing by the time I get around to eating it. This is a legit problem I face on the daily. But I have found the light at the end of the tunnel. Summer rolls are the answer.

This Sriracha lentil summer rolls recipe make for super easy lunch transport and they stay fresh throughout the day. Not to mention they are super healthy and filling. Don’t worry if you don’t have these specific veggies, you can sub whatever you have on hand. Store them in some plastic wrap for an easy snack or light meal later on.

    First, combine the lentils, Sriracha, and sesame oil in a medium sized bowl and mix ’em up.

    To make the rolls, you will need a large bowl of warm water. Making them one at a time, place each wrap into the water for about 1 minute or until it’s soft.

    Lay the wrap onto your surface. Then place pieces of cilantro, a handful of carrots and beets, a few slices of avocado, and about a 1/4 cup of lentils down the center of the wrap.

    Next, carefully fold the sides of the wrap inward and then wrap the roll to close. Repeat with the remaining wraps.
