Everybody knows and loves the classic brownie. The perfect combination of chocolate and gooeyish texture. It's a staple at every bake sale. But some bake sales need a mix up. That's when the Blondie comes. Instead of a chocolate base, a Blondie can be like a chocolate chip cookie or a butterscotch brownie. There is an endless amount of combinations.

But what about spinach and cheese? It's not a dessert, it's not sweet, can it work? I would say so! I grew up with spinach and cheese in my "brownies", making them more like blondies. They were always in my hand or my mother's when walking up to a party. Yep, upon request we would always bring her crowd pleasing Spinach Blondies. 

These green treats are filled with cheese, onions and of course, spinach. They are the perfect snack to grab on the go or the newest appetizer at your next party! They take the Blondie to a whole different level. 

Spinach Blondies

    Ingredients

  • 1 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 cup milk
  • 2 eggs
  • 1 stick salted butter melted
  • 1/2 cup chopped onion
  • 1 lb cheddar cheese shredded
  • 1 pkg frozen chopped spinach cooked and drained

Step 1:

Grab all your ingredients!

Defrost your chopped spinach. For me, it takes about 8 to 10 minutes in the microwave. Make sure you drain out the water in your spinach. You can do this with a paper towel or by hand. 

Step Three: 

Sift the flour, salt and baking powder together in a bowl.

Step Four: 

Add eggs, milk and melted butter: stir.

Step Five: 

Chop your onion in little pieces and grate as much cheese as you please!

Step Six: 

Add the cheese, onions and the spinach. Mix well!

#SpoonTip: These Spinach Blondies can be frozen for later and reheated at 350 degrees for 10-12 minutes.

Step Seven:

Pour into 13 x 9 inch pan or whatever you use for making brownies.

Step Eight: 

Bake at 375 for 30-35 minutes. When cooled cut into squares (like brownies!) Depending on how you cut them, these treats can fill the bellies of more than 12 people. It's up to you!
