Fall, that lovely time of the year when the leaves turn red, the weather becomes cool, and everything is suddenly pumpkin-flavored. In school terms, this also means midterms creep up on you and that money you used to have for that Starbucks Pumpkin Spice Latte has suddenly disappeared. If you're like me and need a hard ass drink after a midterms, look no further. This spiked Pumpkin Spice Latte will satisfy your fall thirst. As an added bonus, it's vegan.

Spiked Pumpkin Spice Latte

Ingredients
  • 1 cup coconut milk
  • 3 tablespoons canned pumpkin
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 cup hot strong coffee
  • 2 tablespoon dark rum
  • 2 tablespoon rum and coffee liqueur
  • vegan whipped cream

Step 1

In a small saucepan, add coconut milk, pumpkin, and sugar.

Heat ingredients over medium heat until hot (do not boil). This will take about 3-5 minutes.

Stir in vanilla, pumpkin pie spice, coffee, dark rum, and the rum and coffee liqueur.
