Guys, we gotta talk about meal prep. If you haven’t done it yet, don’t freak out and leave just yet. Meal prep is a lifesaver, especially for college students. If you’re like me and are on campus all day, you know you need healthy, protein-packed options, so you don’t feel like you have to go back for thirds or fourths at the dining hall to feel full. Spicy Sweet Potato Egg Cups

    Ingredients

  • 8 eggs
  • 1 medium zucchini diced
  • 1 small sweet potato diced
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp sea salt
  • 1 tbsp olive oil
  • Cooking spray

    Pre-heat your oven to 400° F.

  • Step 2

    Dice the zucchini and sweet potato. Add in the spices and oil, and mix well.

    Once mixed, whisk in the eggs and combine until the egg yolk has separated.

    Spray your muffin tins with cooking spray. Pour the egg mixture into each slot, filling 3/4 of the way full.

    Bake for 15-17 minutes. Once done, remove and let cool for 5-10 minutes.

You honestly can’t go wrong with this sweet potato/egg hybrid, and using Handsome Brook Farm eggs makes it even better. Feel free to be inspired and switch out ingredients to make your own spicy sweet potato egg muffin combos. I personally love adding ALL the veggies, and honestly, any combination is a winner.
