Nothing is worse than starting your day off with a bland, flavorless breakfast. These jalapeño poppers are anything but that. Each egg cup is the ultimate combo of heat and flavor. In addition, each popper has a piece of bae-con wrapped around it. What more could you ask for? Get ready to wish you could have these every day because they are fire.

Jalapeo Popper Scrambled Egg Cups

  1. Prep all of your ingredients as needs. Seed and chop your jalapeños. Save 1 jalapeño that you can cut into rings as a garnish for the top. Preheat oven to 375°F.

  2. Par-cook bacon so it’s semi crisp but still pliable. Save bacon grease in the pan for later.

    Mix together eggs, cream cheese, chopped and seeded jalapeño peppers, leftover bacon grease, garlic powder, onion powder, and salt and pepper to taste.

    Grease wells of muffin tin, then place a the bacon around the edges.

    Pour egg mixture 2/3 of the way in each muffin well. Be warned, they rise.

    Add cheddar cheese on the top of the muffin, then a jalapeño. Cook at 375°F for 20-25 minutes.
