Winter’s coming to a close and it’s time to lighten up on extra layers and draw away from heavy foods. Here are two sides that are full of flavor sans the heavy guilt.
Sinless Sweet Potato Chips
Prep time: 5 minutes
Cook time: 20 minutes
Total time: 25 minutes
Servings: 2
Ingredients:
2 sweet potatoes
cooking spray (optional)
salt
Directions:
1. Preheat oven to 375° F.
2. Slice sweet potatoes as thin as you can. The thinner the slice, the crispier the chip. Tip: If you have time, place sweet potato slices in a bowl of cold salt water for an hour. This will absorb the moisture from the sweet potato to give you a crunchier chip.
2. Place slices on a greased baking sheet, making sure the slices do not overlap. Spray slices with cooking spray, or combine with 1-2 tablespoons oil before placing on baking sheet.
3. Sprinkle salt over the slices (use sea salt if you have it) and bake for 15-25 minutes, or until slices are very crisp. After 10 minutes, check for any pieces that look done and remove to prevent burning. They can burn easily, so keep a close eye on them.
4. Let cool and eat, or store in an airtight container for up to two days.
Sinless Spinach Artichoke Dip
Prep time: 15 minutes
Cook time: 20 minutes
Total time: 35 minutes
Servings: 6
Ingredients:
1 bag (16 oz.) frozen spinach, thawed and drained
1 can artichoke hearts, drained and chopped
1 cup mozzarella cheese, shredded
1/2 cup Greek yogurt
1/2 cup mayonaise
1/4 cup onion, chopped
1 clove garlic, minced
Directions:
1. Preheat oven to 375°F.
2. Mix all ingredients in a baking dish except for 1/2 cup mozzarella. Once combined, sprinkle mozzarella on top.
3. Bake for 25-35 minutes. Serve warm.
