Show Off Your Grill Master Skills With These Stuffed Portobello Mushrooms

Stuffed mushrooms are a great way to show off your grill master skills. They are very simple to make, but have great flavor and presentation. Spinach and cheese are a great combination to fill the caps with, but you could also use sausage or other meats if you prefer a heartier version instead. Pick some portobello mushrooms up from the store today and let your grill do all the work for you. Your friends will be impressed, and your taste buds will thank you.

Grilled Portobello Mushrooms

Ingredients
  • 3 portobello mushroom caps
  • 2 tablespoon olive oil
  • 4 oz reduced fat cream cheese
  • 1 cup cheddar cheese
  • 1 clove garlic
  • 2 cup packed, chopped spinach
  • Parmesan, to taste
  • Pepper, to taste

Step 1

Preheat the grill to 400ºF.

Step 2

Wash the mushroom caps, remove the insides, and rub the top in olive oil.

Step 3

In a medium-sized bowl, combine spinach, cheeses, and garlic until combined.

Step 4

Place the mushrooms on the grill and cook for three minutes face down.

Step 5

Fill the mushrooms with the spinach mixture.

Step 6

Let the mushrooms sit on the grill for another ten minutes.

Step 7

Remove from grill when mushrooms are tender and cheese is melted.

Step 8

Plate immediately and serve warm.
