Just a few days before New Year's eve, Culinary goddess Nigella Lawson shared a serene, sneak peak of her picturesque sweet escape through the back waters of Kerala. Her soothing boat ride amidst the palm fringed Coast line of kerala clocked her off from the social media for about a week. Ever wondered why? Must be the mouthwatering lamb stew and tender rice string hoppers.  Here's a recipe which Nigella must have definitely not missed out on her venture in kerala: 'Seer Fish Wrapped in Banana Leaves featuring God's Own Country.'

Seer Fish Wrapped in Banana Leaves

    Ingredients

  • 1 kg Seer fish
  • For Marinade:
  • 2 tbsp Pepper powder
  • 1/4 tbsp Turmeric powder
  • 1 1/2 tbsp Salt
  • For Gravy:
  • 1 1/2 tbsp Coriander powder
  • 1 tbsp Chilly powder
  • 1 tsp Turmeric powder
  • 1/2 kg Shallots
  • 10 Green Chillies
  • 2 inch long Ginger
  • 1 pod Garlic
  • 1- 1 1/2 cups Coconut milk
  • 2- 3 Pot tamarind or Vinegar
  • 3- 4 Banana Leaves
  • Few Curry Leaves

  • Step 1

    Fillet a Seer Fish or purchase ready-made raw fish fillets.

    Mix pepper powder, turmeric powder and salt in a bowl and marinate the fish.

    Marinate for 1 hour.

    Prep the vegetables and thinly slice the shallots, ginger, chillies and garlic.

    Shallow fry the fish in a pan. Then saute shallots, ginger, chillies, garlic and curry leaves for 2-4 minutes and set aside.

    In a Mortar bowl grind coriander powder, chilly powder and turmeric powder using a pestle.Use the same flavorful oil to cook the gravy. Add in the spice mixture and saute. Add in the Coconut milk and pot tamarind.

    Gently soften the banana leaves over low flame then place a fish fillet on a banana leaf and pour in some gravy. Neatly parcel the fish and fry in an old greased non-stick skillet over the stove.
