How to Make a Spring Salads, Salsa and Smoothies Even When It’s Cold Out

It’s that time of year again! Spring has finally come, or at least according to most calendars… and if that cloudy weather’s got you down, here are some delicious recipes to make you feel like the sun is shining down on you. From fresh salads to homemade salsa and yummy breakfast smoothies, these recipes are sure to put a smile on your face and give you hope for nicer weather.

Spring Sprout Salad

Easy

Total Time: 5 minutes
Servings: 1

Ingredients:
2 cups broccoli sprouts (any other sprout mix works fine as well)
1/4 cup baby carrots
1/8 cup pickled red onions
2 tablespoons salad dressing (I recommend Wegman’s Spicy Citrus Ginger Dressing)

Directions:

1. Combine all ingredients in a bowl and toss to coat the salad with dressing.

Broccoli Salsa Salad

Easy

Total Time: 5 minutes
Servings: 1

Ingredients:
2 cups chopped broccoli
1 lime, juiced
1/4 cup tomatillo salsa (see below for recipe)

Directions:

1. Combine all ingredients in a bowl and toss to coat the salad with dressing.

Tomatillo Salsa

Medium

Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes

Servings: 8

Ingredients:
5 tomatillos (green tomatoes)
1/4 medium onion
2 limes, juiced
1 handful fresh cilantro, washed
salt to taste

Equipment:
Pan
Blender

Directions:
1. Roast the tomatillos in a pan on medium heat until the skin is almost entirely black (about 5-7 minutes).
2. Squeeze the lemon juice into a blender and add the 1/4 onion.
3. Add the roasted tomatillos to the blender one at a time until completely liquified. (Note: feel free to blend less if you prefer a chunkier salsa).
4. Roughly chop the cilantro and add to the blender.
5. Add salt to taste.
6. Let rest in the fridge for 5 minutes to thicken, then enjoy!

Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes

Servings: 8

Ingredients:
4 tomatoes
1/4 medium onion
1 lime, juiced
1 handful fresh cilantro, washed
salt to taste

1 frozen unsweetened acai smoothie pack (I like Sambazon’s acai packs)
1 small banana
1/2 cup frozen blueberries
1 1/2 cups unsweetened almond milk
1 teaspoon honey

Personal sized blender

Mixed Berry Smoothie

Easy

Total Time: 5 minutes
Servings: 1

Ingredients:
1 small banana
1/2 cup frozen mixed berries
1 1/2 cups unsweetened almond milk
1 teaspoon agave syrup (optional)

Equipment:
Personal sized blender
