I found “rainbow carrots” at Hyde Park Produce the other day, and decided on the spot that I needed to purchase a large bag of them. They taste and cook just like any other carrots, but are beautiful enough to be served at a dinner party and fun enough to spruce up an otherwise boring lunch or dinner.
Prep Time: 5 minutes
Cook Time: 30-40 minutes
Total Time: 35-45 minutes
Ingredients:
Carrots
Olive oil
Salt/ any other spices you like, to taste
Directions:
1. Pre-heat oven to 400°F. Peel and chop carrots, toss them with about a tablespoon of olive oil, and sprinkle with salt and/or any other flavorings you would like.

2. Roast for about 30-40 minutes, or until you can easily pick up a carrot with a fork.
