Recipe Roundup: National Cupcake Day

You’d be hard pressed to find someone who doesn’t love a good cupcake. With all the cupcake shops that have opened in the past few years and all the new exciting flavors, there isn’t a single reason not to adore these tiny cakes. Of course, there is now a whole day dedicated to cupcakes! Here are a few recipes to make that best exemplify all the lovely scrumptiousness cupcakes have to offer.

1. Lemon Cupcakes with Blackberry Frosting
With summer gone and winter approaching, these cupcakes are a perfect way to have all the fruity flavors of warm weather during the snowy doldrums. A light lemony cake is the perfect pairing for blackberry frosting, and this recipe hits it on the head.

2. Banana Bread Cupcakes with Peanut Butter Frosting
I don’t know about you, but my favorite childhood snack was definitely bananas smothered with peanut butter. These cupcakes embody all that nostalgic flavor in the best way possible. Feel free to throw on some crushed pretzels on there too if you like a sweet and salty combo.

3. Mac and Cheese Cupcakes
Yeah, so cupcakes are typically sweet. But who are you to turn down a cupcake made of mac and cheese? These babies are any college student’s dream: cheesy, gooey, warm and in a conveniently sized wrapper. What’s not to love?

4. Maple Browned Butter Bacon Cupcakes
While we’re on the savory theme, why not throw in some bacon? Not only have cupcakes been a serious food trend for the past couple years, but bacon has seen its time in the spotlight as well. This piggy product has been thrown into every recipe imaginable, cupcakes included. This recipe does a great job of balancing sweetness and saltiness, creating a mouth-watering concoction that sings with the addition of brown butter.

5. Chocolate Chip Cookie Dough Cupcakes
I think every college student is guilty of taking a spoon to a tub of cookie dough at some point and going to town. Next time you get your paws on some cookie dough, why not turn it into a cupcake? These creations combine the best of both worlds: raw dough and pillowy cupcakes. So go ahead, give ’em a try.
