Quick and Easy Paleo + Vegan Nutella Cookies

We’ve all stood on our tiptoes to look into the back of our pantries with hopes of some sort of chocolate treat hiding where we can’t see it. Sometimes you simply got to have some chocolate! With this simple recipe your chocolate cravings can be sated in ten minutes with ooey-gooey nutella cookies. Plus, this recipe is crazy flexible - it can easily be made vegan, or if you’re in a nutty mood they can become almond butter cookies!

The back of your pantry will probably come in handy, since these ingredients are most likely sitting back there waiting to be put to use. So let’s get our chocolate party going!

Ridiculously Easy Nutella Cookies

Ingredients
  • 2 cups nutella
  • 2 cups coconut sugar
  • 2 large eggs
  • 1/4 - 1/2 cup cocoa powder

Step 1

Preheat your oven to 356°F.

Step 2

In a smaller bowl, whisk your eggs until they’re frothy. Then, combine the rest of your ingredients until smooth.
If you want to make these cookies vegan, substitute the egg for 2 tablespoons of ground flax mixed with 6 tablespoons of water.

Step 3

Form golf ball-sized spheres and place them on a lined baking sheet. Since the batter is extremely sticky, oil your hands a bit before scooping it out. Get a little fancy by pushing them down with a fork to make a design, then get your #saltbae on and sprinkle a little salt on each cookie to complement the chocolate.

Step 4

Pop those beauties in the oven for 7-10 minutes, until golden brown. This is the hard part: in order for the cookies to firm up and become the chewy chocolate cookies of you dreams, they have to cool down. Give them some space, or if you're impatient like I am pop them in the freezer.
