How to Make Queenie's Apple Strudel From 'Fantastic Beasts and Where to Find Them'

Magical apple strudel. There is a long list of things that my muggle heritage has robbed me of, but I have to say this is the one that hurts the most. Out of all the food featured in Fantastic Beasts and Where to Find Them, this clip had me downright weeping. Can you imagine a world where you could assemble a beautiful dessert in mid-air with just a wave of your wand?

Well, I promise this Queenie apple strudel recipe is no-maj friendly. There's absolutely no magic required. You may not be able to make the apples and pastry levitate and twirl together, but it'll turn out yummy all the same.

Apple Strudel

Ingredients
  • 6 small apples
  • 50g raisins soaked in hot water
  • 1/2 juice a lemon
  • 60g caster sugar
  • 1 1/2 teaspoon ground cinnamon
  • 150g butter melted
  • 50g bread crumbs
  • 5 sheets filo pastry

Step 1

Assemble your ingredients (ignore the flaked almond please. No idea how they snuck in there...Maybe one of the escaped beasts.)

Quarter and core the apples, then cut them into medium slices. Mix the slices with the drained raisins and toss with the lemon juice, cinnamon and sugar.

Fry the breadcrumbs in a tablespoon of the melted butter till they turn golden brown.

Sprinkle flour on a clean tea towel and place a sheet of phyllo pastry on it. Drizzle the sheet with enough butter to create a thin coating and spread it our with your fingers. Get right to the edges. Repeat with 3 more sheets of pastry.

Spread the breadcrumbs over half the pastry sheet. Top them with the apple mixture, making sure you drain away any liquid that the apples have released.

Use the towel to start rolling the strudel. Roll lengthways, letting the pastry roll over the filling.

Tada! See? Totally easy. Now keep rolling like that, and when you get to the end just roll the log onto a parchment lined baking sheet. If any filling falls out, just shove it back in the ends.

Take the last filo sheet and spread 1/2 of it with butter. Fold it in half and cut into 9 strips lengthwise.

Taking 3 strips at a time, braid them together. Not gonna lie this gets a little fiddly but you can definitely do it. Newt believes in you.

Place 2 braids on either end of the log, and 1 dividing it in the middle. Brush over the rest of the butter.

Just a quick note, those gorgeous apple flowers? The ones that delicately float themselves onto the strudel? Yeah, we are but mere muggles. Life is far too short. I'm sure Queenie will understand your strudel not having apple rosettes.

Bake in a 375°F oven for 40 minutes. Dust with icing sugar and BOOM. You've got strudel.
