Pumpkin Chocolate Chip Cookie Sandwiches

I know, you’re thinking it’s just another article about pumpkin things in this fall — how creative. But here we have for you the perfect fall dessert: a combination of pumpkin, chocolate, and frosting. It might just replace your pumpkin pie at Thanksgiving.

Pumpkin Chocolate Chip Cookie Sandwiches

  • Total Time: 45 minutes

Ingredients
  • 2 cup butter
  • 3/4 cup granulated white sugar
  • 1 1/4 cup brown sugar
  • 2 eggs
  • 1 can pure pumpkin
  • 1 1/2 teaspoon vanilla
  • 3 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cup chocolate chips
  • 2 8-oz. packages cream cheese
  • 5 cup powder sugar

Step 1

Preheat oven to 350°F.

Step 2

Combine 1 cup butter, granulated sugar, and brown sugar until fluffy.

Step 3

Add eggs, pumpkin, and ½ teaspoon vanilla. Mix until combined.

Step 4

In separate bowl, mix flour, baking soda, cinnamon, nutmeg, and salt until combined.

Step 5

Slowly add dry ingredients to wet ingredients, mix until smooth.

Step 6

Mix in chocolate chips.

Step 7

Place by rounded tablespoon 2 inches apart on baking sheet.

#SpoonTip: If the dough is too sticky, add up to 1/2 cup flour or as need.

Step 8

Bake 10-12 minutes or until edges are golden.

Step 9

Combine cream cheese and powdered sugar until smooth.

 

Step 10

Place frosting in refrigerator until cookies are cool.

Step 11

Once cool, spread 2 tablespoons frosting between 2 cookies.
