Craving a pumpkin dessert late at night? Since no one has time to make a pumpkin pie in the middle of the week, we are grateful that someone out there invented baking dishes and mugs. You can make your own healthy, vegan pumpkin cake with just a microwave in your very own kitchen. This recipe makes just enough for one hungry person or 2 people who like to share. If it was up to me though, I would eat it all myself.

Ingredients:
2 tablespoon all purpose flour
1/8 teaspoon baking powder
3/4 tablespoon sugar
1 tablespoon pumpkin puree
2 tablespoon milk
1/2 tablespoon vegetable oil
1/8 teaspoon cinnamon

Directions:

1. Combine all ingredients in a ramekin dish or mug.

2. Mix well until combined smoothly.

3. Cook in microwave for 1 minute. The top of the cake should be dry; if not, microwave for a few more seconds. Let cake cool a few minutes before eating.
