Something about the rain (and recently in Vancouver, November snow?!) makes you want to stay huddled inside with a cup of hot tea. And what goes perfectly with that tea?

These chewy, chocolate-y and fudgy brownies that will take less than 20 minutes to whip up and will warm up your soul. All you need are some basic ingredients and your happiness is guaranteed.

This is my mom’s secret recipe where she adds in a bit of melted chocolate or syrup to make extra rich, fudgy brownies.

Easy, Fudgy Brownies

    Ingredients

  • 1 cup sugar – you can substitute maple syrup to any amount
  • 1/2 cup butter
  • 1 tsp vanilla essence or lemon juice
  • 2 eggs
  • 2/3 cup flour
  • 1/2 cup cocoa
  • 1/2 tsp baking powder
  • Pinch salt
  • 1/2 cup chocolate syrup or melted chocolate
  • Optional: 1/2 cup chocolate chunks or chopped nuts or raisins

    Preheat oven to 375F and measure out your ingredients.

    Beat the eggs, butter, sugar and vanilla essence or lemon juice.

    Stir in dry ingredients and mix, but be careful not to over-beat. If the batter is too dry, you can add in some milk, more chocolate or maple syrup.

    Pour into a shallow baking tin, sprinkle nuts, raisins or chocolate chunks on top and bake for 10 minutes (or slightly more) until they're done.
