These Peanut Butter Jelly Crumb Muffins Aren't Just For Kids

Growing up my favorite sandwich was always peanut butter and jelly, and I remember eating one for lunch basically every day. It's since faded out of my life, but every once in a while when I do go for a PB&J, I'm reminded just how great the simple sandwich is.

When I heard about peanut butter and jelly muffins, I knew I wanted to give them a try. At first I wasn't sure if I would like them, but what surprised me most about these muffins was how true to taste they really are. Combining the flavors of peanut butter and jelly into a delicious muffin form, this recipe is a win-win.

Peanut Butter and Jelly Muffins

Ingredients
  • 6 tablespoon butter
  • 3/4 cup peanut butter
  • 1 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 egg
  • 1/2 cup brown sugar
  • 2 teaspoon vanilla extract
  • 3/4 cup milk
  • 12 ounce jelly or jam
  • Crumb Topping:
  • 1/6 cup brown sugar
  • 1/6 cup sugar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/4 cup butter melted
  • 3/4 cup flour

Step 1

Add peanut butter and butter in a bowl and melt for 30 second increments in the microwave until fully melted.

Step 2

Add flour, baking soda, cinnamon, and salt in a large bowl and mix together. Set aside.

Step 3

Add brown sugar, vanilla extract, and an egg together in a large bowl and mix until fully combined.

Step 4

Add peanut butter mixture and flour mixture into the brown sugar, vanilla extract, and egg mix. Once combined, add in milk and mix fully.

Step 5

In a separate bowl, mix the crumb topping by combining flour, brown sugar, sugar, melted butter, cinnamon, and salt. Mix until crumb topping forms.

Step 6

Spray your muffin tin with baking spray and add a spoon of muffin dough into each muffin hole.

Step 7

Add a spoonful of jelly of your choice to the center of each muffin.

#SpoonTip: don't just put the jelly on top because the muffins will be too dry if the jelly isn't added to the center.

Step 8

Add crumb topping to the muffins and bake at 350°F for 25 minutes.
