Pan-Roasted Garlic Parmesan Potatoes With Bacon

Potatoes are a staple in the pantry because of their long shelf life and simplicity, but these pan-roasted babies are something new you can bring to the table. They pair especially well with garlic and bacon (then again, what doesn’t?), while the chives and parmesan add a touch of freshness and life to the dish.

    Wash potatoes and set them in a pot of cold water on the stove. Bring the pot to a boil, and then let the potatoes cook for about 30 minutes, or until you can pierce them easily with a fork.

    Cut bacon into bite-sized pieces and cook in a pan until crisp (3-5 minutes). Remove and set aside on a paper towel to absorb any excess fat.

    In the same pan with the bacon grease, add the cooked potatoes and fry for 5-10 minutes until they start to brown. Add in garlic, salt, and pepper and continue to fry until garlic is cooked (1-2 minutes).

    #SpoonTip: Cut the potatoes in half before cooking them in the pan to get more flavor out of each piece (For the science majors: increased surface area to volume ratio).

    Remove pan from heat and add the bacon, parmesan, chives, and butter. Toss the potatoes in the hot pan until all ingredients are evenly distributed. Plate your dish with a sprinkle of chives for extra flavor.
